Chocolate Cherry Pie Donut Recipe



Description –
This is an easy, easy dessert and it combines two of my favorite flavors – chocolate and cherries. The cherry pie filling adds a lot of color and flavor.

The chocolate donut can be one left over from the office and the chocolate top doesn’t have to look perfect because it is going to be covered in the pie filling.

With only two ingredients (three if you count the whipped cream), this is a fast and easy dessert.

Whole donuts can be served or slice each one like a cake (this is a very filling dessert).
           

Ingredients –

6 chocolate round donuts
1 can cherry pie filling

Whipped cream (optional)


Directions –

Slice donuts in half and place the bottoms on serving dishes. Spoon half of the cherry pie filling over each of the bottoms. Place the tops on the donuts and spoon the remaining cherry pie filling over the top. 
Put a shot of whipped cream on each donut.
           

Variations –
Top with whipped cream if you want to add a little more color and flavor. You can also add a layer of whipped cream before putting the tops back on to add a white stripe on the donuts.
You can also use other pie fillings. Blueberry pie filling works well. Apple pie filling works but the apples can be a bit on the heavy side so cut them up into smaller pieces.


Would I Make It Again?
I would make this every time we have left over donuts. Here’s a little trick – you can freeze the chocolate donuts and keep them in the freezer and pull them out and thaw when you need a quick dessert.

Lemon Curd - The Keto Way


This is a fantastic recipe to use when you have a whole bunch of lemons to use up. My mom's tree had a bountiful harvest and we needed to use up a whole grocery bag full of lemons.
For a special holiday gathering, we decided to adopt our regular award-winning lemon curd recipe to make it keto compatible and to go along as a topping for a keto cake.


Ingredients

3/4 cup fresh squeezed lemon juice 

1 tablespoon grated lemon zest 

3/4 cup monkfruit granulated sugar  

1/2 cup unsalted butter

3 eggs




Directions

Cube the butter into small pieces. In a 2 quart saucepan, combine lemon juice, lemon zest, sugar, eggs, and and the butter cubes one or two at a time while continually stirring. Cook over medium-low heat until the curd is thick enough to hold marks when you drag a spoon across the bottle of the pan and then the first bubble or two start showing up. This takes about 5 to 7 minutes. Do not overcook.

Strain through a strainer if you want to make sure you get out any bits of egg that may have coagulagted.

Cool and serve.


Put lemon curd on toast, cake, just about anything that needs a sweet pucker of lemon flavor.


Why I'd Make This Again

Once you get the process down, it really is quite easy. Plus it's amazing all the uses you can put this curd to once you see it sitting in your fridge, just begging to be part of your breakfast or dessert.

Captain Almond Krispy Krunch Treats


Rice Krispy treats are a big hit in our household but the same recipe all the time gets mundane. So to change things up this recipe puts in some Captain Crunch. Another favorite mix-in is almonds so to give the recipe some crunch, stir in a bunch of almonds.


 Here’s how:

Ingredients

4 cups Krispy Rice cereal
2 cups Captain Crunch (any flavor)
1/2 cup sliced almonds
4 cups mini marshmallows
1/4 cup butter



Directions
Melt together butter and marshmallows. The microwave works great for this just do it in 30 second bursts, stirring in between because it doesn’t always heat evenly.
Stir in cereals and almonds until well combined.
Press into a well-buttered baking dish. Cut after cooled.

Variations
You can use large marshmallows but they a bit more difficult to melt.
Other nuts and cereals make great mix-ins. Cocoa Pebbles give a chocolate spin. Walnuts add a great flavor.


Would I Make It Again?
We do this on a pretty regular basis, especially as the holidays approach.
Use parchment paper or waxed paper if you don’t want the additional butter from the greased pan.
