French Fries Omelet

French fries are just potatoes, right? Potatoes make a great filling for a hearty omelet, right? So why not put to great tastes together.

On the rare occasion we have leftover fries, this is a great way to use them up. From experience, French fries don’t reheat very well back to their original crisp-exterior/soft-interior condition.

However, they can be used to make a delicious breakfast the next day.

Here’s how to make it:

Ingredients
1 Handful of cooked French fries
2 eggs
2 tbsp grated cheddar cheese
Salt and pepper to taste

Directions
Beat together eggs, salt and pepper. Cook in a buttered skillet and flip once. Pile French fries and cheddar cheese on one said and flip the other side over. Serve on a plate with some more shredded cheese and top with a couple of fries for looks.

Variations
Cut up the fries instead of using them whole. They act more like hash browns.
Try curly fries instead of plain French fries. They add a different flavor and spice up the omelet. Try different cheeses and add chopped peppers and traditional omelet fillings.

Would I Make It Again?
By all means, yes. Not only does this recipe use up some leftovers that are otherwise hard to use, but the precooked French fries work as a great substitute for potatoes or hash browns.

Grilled Cheese Breakfast Sandwich

Cheese, eggs and toast go together, especially first thing in the morning.
This basic recipe is a quick one with ingredients most people keep on hand.

The secret- toast the bread first. Toast absorbs the butter differently and adds to the crunch factor.

Add omelette fixings to amp up this breakfast sandwich (e.g. bacon, sausage, onions, peppers, mushrooms and other goodies), just don't forget to keep the cheese as a dominant ingredient.

This recipe is so easy, it made Twitter's 140letterrecipe list. It's not easy fitting a recipe into 140 characters, but this one works.
